This might give some insight: "A squadron in air force, army aviation, or naval aviation is mainly a unit comprising a number of military aircraft, usually of the same type, typically with 12 to 24 aircraft, sometimes divided into three or four flights, depending on aircraft type and air force. Land based squadrons equipped with heavier type aircraft such as long-range bombers, or cargo aircraft, or air refueling tankers have around 12 aircraft as a typical authorization, while most fighter equipped units have an authorized number of 18 to 24. Sea-based units rarely have more than 12 aircraft authorized at a time. Ok, based on in show references, a Battlestar squadron is about 35 vipers. This mostly comes from "Hand of God". In the briefing on the Basestar, Tigh mentions that the Cylons will have 300 raiders to field against the Galactica. Giving them a 2 to 1 advantage over the Colonials.
That gives you about 150 vipers. Split that into 3 canon squadrons (Blue, Red and Silverspar). That is about 50 vipers each. But we are going on the asumption that here were 4 squadrons (even if it wasn't Blackstar) this gives you 35 vipers per squadron.
This also roughly works out with the recovered vipers after Cimtar. And why Galactica had Blue and Red squadrons instead of consolidating into 1 squadron.

Additionally, a Battlestar is essentially a space borne aircraft carrier. I also believe that each squadron consists of up to sixteen vipers. Each landing/launching bay has sixteen launch tubes. This allows one entire squadron to launch in unison from each bay. The launch tubes can then be loaded with the remaining two squadrons. In most battle sequences, especially in SOASW, at the command "Launch", a whole bunch of vipers are seen launching from both bays to engage the Cylons. Presumably, these are Blue and Red squadrons (sixteen from each bay, 32 total). A few moments later, the command "Launch all remaining vipers" is given and another large bunch of vipers is seen blasting out of the tubes. These would be Green and Yellow squadrons. Unfortunately, in every battle some vipers are lost, and others are presumed to be damaged. Due to this attrition, the Galactica's squadrons would not be operating at full strength. The addition of the vipers from the Pegasus would have brought them up, even over the normal authorized strength, for a while; but eventually they would drop again. For the most part, the Galactica would be operating at less than full strength.

I read somewhere that the fleet had the ability to produce more fighters but not necessarily pilots. I couldn't tell you where I heard it at this point! lol

I know the factory ships like the Celestra could repair vipers and build assemblies for them, but I don't know if they could build entire airframes for them. Of course replacement pilots was a whole other issue. They had problems with that all the way back to "Lost Planet of the Gods".

A way to manufacture Vipers would be interesting. I always wondered if there was a Viper recovery team for the Vipers that were crash landed or what not. Make a fun side story.
